How I Feel About This Chinese Braised Pork Trotter

That's one of my family's favorite dish. The traditional braised taste with super tender trotter. Once it enters your mouth, it just melts in the mouth with all the flavors. We usually eat the skin part because there is not much meat on trotter. Super good for skin because of its collagen. I like it just because it's delicious. When I am writing these words, I feel hungry again.

Story Behind Chinese Braised Pork Trotter

Wan San Trotter is a braised pork hock dish, a specialty from Zhouzhuang in Jiangsu Province, China. It is said to have originated during the Ming Dynasty as a dish presented by the wealthy merchant Shen Wansan to Emperor Zhu Yuanzhang, thus giving the dish its name.

Although it is made from pork hock, to avoid using the emperor’s surname “Zhu,” the dish was named after Shen Wansan, incorporating his name in a way that also sounds like “lifting up” (as in raising prosperity).

Legend has it that when Zhu Yuanzhang stayed at Shen Wansan’s residence, Shen’s concubine prepared Wan San Trotter for him. The emperor enjoyed it so much that he inquired who had made the dish. Shen, wanting to protect his pride, claimed it was a kitchen maid.

The emperor expressed interest in bringing the maid back with him, but since she was actually Shen’s concubine, it was impossible. Seeing Shen’s reluctant expression, Zhu Yuanzhang let the matter go but hoped to taste the dish again on a future visit. Not knowing when the emperor might return, the Shen family made Wan San Trotter a regular dish on their dining table ever since.

Cooking Tips

  • 1 hour for pressure cooker or 2 hours for stove top(low heat)
  • After simmering, you may boil on stove again in high heat to sticker the sauce and make the color more beautiful

Pork Trotter —  500g/17.6oz

Green Onion — Half piece

Ginger — 3 slices

Seasonings

Rock Sugar — 15g/0.53oz

Light Soy Sauce  — 2 tbsp

Dark Soy Sauce  —  2 tbsp

Cooking Wine — 1 tbsp

Cinnamon — 3g/0.1oz

Star Anise — 1 piece/1g/0.35oz

Bay Leaf — 2 pieces

Fennel — 1 tsp

How to Cook Chinese Braised Pork Trotter

Preparation

1. Wash, peel and cut ginger and green onion. 

2. Prepare the sauce : Add cooking wine, light soy sauce, dark soy sauce to a bowl .

3. Prepare the seasonings: set aside cinnamon, star anise, bay leaf, fennel, rock sugar on a plate

Cooking 

1. Put pork trotter, ginger and green onion into a pot and boil. Then rinse and drain the trotter. (This step is called blanching. It is used to remove the fishy smell, blood, and impurities. )

2. Move the pork trotter to the pressure cooker. Add prepared sauces and seasonings to the bowl. Add hot water to cover the pork trotter. Simmer for 1 hour.

3. Now you may enjoy the Chinese braised pork trotter. It's one of the Chinese dish you should not miss.
