
Scallions vs. Green Onions: What's the Difference?
Check the picture above. I went to a supermarket and took a picture. Actually, I tried to search online for an ideal picture to show the difference but all pictures show scallion and green onion separately.

Basically, they are very different in size. Scallion is small and short while green onion is big and tall. In Chinese cooking, we use scallions in most cases.
Why I use green onions in most recipes?
That's because it's hard to find scallion outside China. You can find green onion in most supermarkets all over the world while scallions would be hard to find. That may be because it's hard to store scallions. They go bad in just few days (less than a week).
Can scallions and green onions be used in place of one another?
Go ahead. When I was in New Zealand, I used green onion only because there is no scallion there. I didn't find any problem and even the taste would be stronger and easier to store. That's why I use green onion more often even I am in China.
How to store scallions and green onions?
Well, you need to buy new ones every week especially for scallions even you store in refrigerator compartment. But for green onion, I usually cut them and put into freezer compartment. It can be kept for a long time. Very convenient to use.
