Chongqing noodles are a perfect representation of Szechuan / Sichuan cuisine, offering a bold combination of spicy, fragrant, and slightly numbing flavors. It’s the quintessential Sichuan taste, and if you’re new to Chinese spicy food, this dish is a great starting point. For me, it’s one of my favorite Chinese noodles from Sichuan.

This dish also reminds me of my own journey into the world of spicy flavors. Growing up in a Shanghainese household, we didn’t cook spicy food at home—my mother didn’t eat anything spicy at all. It wasn’t until college, when one of my roommates from Kunming (another city known for its love of spice) brought a large jar of spicy oil chicken to our dorm, that I was introduced to the wonders of spicy food. That experience opened the door to a whole new world of flavors. Since then, I’ve explored all kinds of dishes from Sichuan province, and Sichuan cuisine has held the top spot in my heart ever since.

Broccoli is my favorite vegetable after I learned it contains a lot vitamin C. But it's hard to cook it in a delicious way. Usually, its taste is bland and dry. Until I found this broccoli in rich broth from a local takeaway shop. I almost have it every week.  That's the best way to cook broccoli. The stalks soak up all the flavor from the broth, making them tender and full of taste.

Usually, we don't drink the soup but eat up all the other vegetables.Broccoli is considered a superfood due to its high content of vitamins, minerals, and antioxidants. If you’ve felt the same way about broccoli, I highly recommend giving this dish a try—you’ll know exactly what I mean!

Unlike other braised dishes, this braised beef shank is a cold dish in most restaurants. But it tastes better when it's hot in my opinion. I usually see this dish during the Chinese New Year.  We don't cook this braised beef shank very often at home because it's really time-consuming. Sometimes, you are just gluttonous about this dish. It is worth the time spent. 

This dish might use the most spices than any other dishes. This recipe is a full version spices for braised dishes. You might use this recipe to cook other braised meat which would also be flavorful and tasty.

When hot oil splashes onto all the seasonings and knife-cut noodles, I know I’m experiencing one of the best Chinese noodles ever. Known as Oil-Splashed Noodles, this hot oil noodles dish takes only 15 minutes to prepare.

Mapo Tofu is one of the most iconic dishes from Sichuan cuisine. Mapo Tofu features a spicy and hot flavor, with the taste coming from minced meat and hot sauce combined with the soft texture of tofu. While Mapo Tofu may seem complicated, it's actually quick to cook. If you enjoy spicy food, you should definitely try this mapo tofu recipe. If not, you can adjust the spice level to suit your taste.

This is one of my favorite Shanghai cuisine and I am a Shanghainese. I love its sour taste the most. When it is combined with sweet, it's just so amazing.

My Dad was the first one who brought this sweet and sour ribs to me. But our family didn't cook it a lot because of its sweetness. I sometimes cook for my friends and they just love this Shanghai local cuisine, sweet and sour ribs.

Dan Dan noodles are like Chinese pasta with spicy taste.

I’m a big fan of Sichuan cuisine, and I welcome all kinds of dishes from the province. I especially love their spicy food—every type of spicy noodle is packed with flavor and absolutely delicious. When I used to travel to Chengdu for business, I made sure my stomach was always full!

As a Shanghainese, we usually like sweet taste dishes, but people from other province may not know that spicy is our second best choice. Making Sichuan-style noodles at home not only satisfies my cravings but also saves me time searching for authentic Dan Dan Noodles.

That's one of my family's favorite dish. The traditional braised taste with super tender trotter. Once it enters your mouth, it just melts in the mouth with all the flavors. We usually eat the skin part because there is not much meat on trotter. Super good for skin because of its collagen. I like it just because it's delicious. When I am writing these words, I feel hungry again.

It's sour, salty, spicy and sweet mixed with cucumber light and fresh tastes. My parents like this dish as well. My mum doesn't like spicy food but this cucumber salad works well for her.  Basically, cucumber salad is ideal for summer appetizer. Sometimes, we even eat the raw cucumber and the taste is fresh and nice. We also use a juicing machine to make cucumber juice. It's common to have this fresh drink in a restaurant.

This is one of the iconic Sichuan snack. You would find it in any Sichuan Cuisine restaurants. The first time I have this Sichuan Crisp Pork (Xiao Su Rou) is in a hot pot restaurant.  After ordering, we sat there waiting. Sichuan Crisp Pork is the first to come and it's just so tasty dipping with chili powder. 

There are two kinds of crisp texture for this Sichuan crisp pork, hard crisp and soft crisp. Hard crisp is firm, crunchy, and brittle. When you bite into it, you can hear a loud crack or crunch, and the item breaks easily. While soft crisp is still crisp on the outside but with a slightly softer or more delicate bite. It may have some give or tenderness when you bite into it, and it might not make as loud of a crunching sound. 

You may use this recipe to make hard or soft crisp pork depending one your choice.
