This is an easy and tasty noodles recipe worth trying. After the scallion is fried in oil, the oil itself has a strong scallion aroma. With the soy sauce, the flavor is really simple and stimulates your appetite.
As a local Shanghainese, I have known this dish since childhood. You can find it in local noodle shops and my Dad cooks it from time to time. He always said his scallion oil noodles would be the best scallion oil noodles. He is a fan of noodles.

This is a dish in Shanghai cuisine. Most old Shanghainese would have a childhood memory of this dish.

  • Original Chinese Pronunciation:  Cong You Ban Mian 老上海葱油拌面

Note: You may use the Chinese name to order in China because the translated English name of the dishes might be different in every restaurant. 

Cooking Tips

  • Dry scallion and low heat to avoid splash
  • You may also use green onion to replace scallion if you cannot find scallion

Food

Scallion —  10 stalks

Noodles — 150g/5.3oz 

Seasonings

Oil — 2 tbsp

Light Soy Sauce — 1 tbsp

Dark Soy Sauce — 1 tbsp

 

How to Cook Shanghai Scallion Oil Noodles

Preparation

1. Wash and cut the scallion to 4 cm in length

2. Dry the scallion to avoid splash

Cooking 

1. Add oil to the wok. After it's warm, add cut scallion to the wok.

2. Fry until the color changes to yellow. Add light soy sauce and dark soy sauce to the wok.

3. Boil some water to cook the noodles. Fresh noodles should be boiled for 2-3 minutes, while dried noodles should be cooked for 5-8 minutes.

4. Put the noodles into a bowl and pour the sauce cooked over the noodles. Mix well and here you go.
