At the end of the Eastern Zhou Dynasty, Qu Yuan's Book "Li Sao" also mentioned mung beans. Until the Tang Dynasty, "King of Medicine" Sun Simiao thought that mung beans were a"treatment of cold and heat, to stop dysentery, diarrhea, urination". Then the mung bean soup is created and spread.

How to Make Chinese Sweet Mung Bean Soup
Preparation
1. Wash and clean all the mung beans. Check if there is dirt or damaged mung beans and throw them out.
2. Prepare 50g rock sugar.

Cooking
1. Put mung beans, rock sugar and water into a stockpot. Turn the heat to boil the mung bean soup.

2. After the mung bean soup is boiling, turn the heat to a minimum to simmer the mung soup for around 30 minutes.
