How I Feel About This Chinese Sweet Mung Bean Soup

That's the kind of dessert I would eat every summer. It clears heat and detoxifies in Chinese medicine theory. When I was young, I drank sweet mung bean for acne treatment. It tastes even better after cooling.

Story Behind the Mung Bean

Mung beans as a crop have been in China for more than two thousand years. In the Western Zhou Dynasty, mung beans were introduced into China from Southeast Asia. At the end of the Eastern Zhou Dynasty, Qu Yuan's Book "Li Sao" also mentioned mung beans. Until the Tang Dynasty, "King of Medicine" Sun Simiao thought that mung beans were a"treatment of cold and heat, to stop dysentery, diarrhea, urination". Then the mung bean soup is created and spread.
