How I Feel About This Chinese Shredded Potato Stir-fry
It's actually a totally different texture from usual potato. I guess you never had this kind of shredded potato before because my international friend was surprised it's potato. Not Tender, not creamy or moist but crisp and soft on both inside and outside.
How does that happen? That's because most of the starch in shredded potatoes can be removed by rinsing with water or soaking in acetic acid.This prevents the julienne potatoes from becoming sticky or limp when fried due to the presence of starch, thus maintaining their crunchy texture.

Story Behind Chinese Shredded Potato Stir-fry
According to relevant historical records, potatoes were introduced to China during the Wanli period of the Ming Dynasty, between the years 1573 and 1619.
The history of Spicy and Sour Shredded Potatoes can be traced back to the Qing Dynasty. During that time, people had already begun using potatoes as a cooking ingredient, creating various dishes with them.
In Chengdu, Sichuan Province, a chef named Chen invented this dish featuring shredded potatoes as the main ingredient, complemented by spicy and sour seasonings. The dish's delicious taste quickly became popular with customers. Since then, it has become one of China's traditional delicacies and has spread throughout the country.

Ingredients to Make Chinese Shredded Potato Stir-fry

Food
Potatoes — 500g/17.6oz
Garlic — 5 cloves
Ginger — 1 slice
Green Onion — 1/4 piece
Seasonings
Oil — 1 tablespoon
Dried Chili/Chili Pepper— 2 pieces
Chinese White Vinegar — 3 tablespoons
Salt — 1/2 teaspoon
Chili Oil — 1 tablespoon
Sichuan Pepper — 1 tablespoon
How to Cook Chinese Shredded Potato Stir-fry
Preparation
1. Wash, peel and cut the potatoes to shreds and put these shredded potato into cold water right after cutting. Rinse several times would help shredded potatoes crispy. (For cutting potatoes, you need to cut a few slices from the longer side of the potato to create a flat surface. Place this flat side down on the cutting board for stability. Continue slicing the potato in this position. )
2. Wash and cut green bell pepper, chili pepper and ginger to shreds, garlic minced, and green onion.

Cooking
1. Heat the pan and add 1 tablespoon of oil, and 1 tablespoon of Sichuan pepper. After you can smell the fragrance of Sichuan pepper, get these Sichuan pepper out.

2. Add green onion, ginger and (dry) chili pepper to the pan and fry until they smell.

3. Pour in the drained shredded potatoes and stir-fry evenly. Immediately add 3 tablespoons of white vinegar and continue to stir-fry for about 1 minute.

4. Add green bell pepper and salt to fry. Then Add garlic and chili oil, mix well, and turn off the heat.
