Introduction

Chinese clove, known as 丁香 (Ding Xiang) in Mandarin, is a highly aromatic spice derived from the dried flower buds of the clove tree (Syzygium aromaticum). This spice has a long history in Chinese cuisine, traditional medicine, and even cultural rituals.

In Chinese cooking, cloves are used sparingly due to their strong, pungent aroma and intense flavor. They are an essential component of five-spice powder, a traditional seasoning blend that includes star anise, Sichuan peppercorn, fennel, and cinnamon.

Cloves are also commonly used in braising liquids for dishes like braised pork and braised dishes, imparting a warm, slightly sweet, and spicy flavor. 

Cloves have been used in China for centuries, first imported from Southeast Asia during the Han Dynasty. They were considered a luxurious spice and were even used as a natural breath freshener by ancient Chinese courtiers.
